Jim-Dear, smoked some ham this weekend, that is out of this world; as always. As usual, I chuckled at the wonderful charcoal he uses; Lazzari Mesquite Charcoal, that we pick up in huge bags of at Cash & Carry. This charcoal is the real deal. Branches of the trees, knots, the whole bit. Sometimes the hunks are so big Jim-dear has to knock them into smaller pieces so they will fit under the rack! Very cool. If you grill or smoke using charcoal, ditch the pressed stuff that has bits of mystery fillers and get some real charcoal. You'll taste difference in what you cook on the grill.
As for these tasty little hams, we'll keep one out and toss the rest in the freezer. I love the hams Jim-Dear makes... tender, juicy and as close as we can get without driving to the east coast, to get a true Virginia Smoked Ham.
